Frosted Egg Nog Logs
3 cups all purpose flour
1 teaspoon ground nutmeg
1 cup butter or margarine (I always use butter)
3/4 cup sugar
1 egg
2 teaspoons vanilla
1 teaspoon rum flavoring (I use 1 tablespoon of Rum)
Rum Frosting (see below)
Nutmeg for dusting

Combine flour and nutmeg and set aside. Cream butter for 30 seconds; add sugar and beat until fluffy. Beat in egg, vanilla, rum until combined. Gradually add in flour/nutmeg combination and mix well
Shape dough into 2-3 inch logs, about 1/2" wide. Arrange on cookie sheet and bake at 350 for about 15-17 minutes or just until lightly browned. Cool on a rack, then frost with Rum Frosting. (I'll often drag a fork on the top of the 'logs' to make it look like bark....totally optional, but cute!) Dust with additional nutmeg. These freeze well!
Rum Frosting:
3 tablespoons butter
1/2 tsp vanilla
1 tsp rum
2 cups powdered sugar
2-3 tbsp milk
Combine butter, rum, vanilla and mix well. Add 1/2 cup sugar and mix. Add remainder of sugar in 1/2 cup increments, adding milk when needed. This makes JUST enough frosting for the cookies, so don't sample too much!
