What's the 'norm' for tipping at AI resorts? Tip all at the end? Or every day?

The place where we'll be staying in Mexico has 'resteraunts' so I doubt we'd see the same waitstaff on a regular basis.

Also, obvs tip the maid and your fav. bartender and any conciere service, but who else?

When we went to Aruba, we were instructed that tips were absolutely not required. If we felt someone went WAY above the normal job responsibilities, we *could* do so if we felt we *had* to.

They had the "restaurants" thing there too, and we only once left a tip. But maybe we're cheap? :)

The all-inclusive resort I went to in Jamaica and the Bahamas strongly discouraged tipping...in fact the few times I tried to tip waitstaff/bartenders, they refused to take it...go figure.

It might be different at your resort, but you can always ask upon checking in. They might tell you the tipping policy right up front, at least that's what they did when I checked into the one I stayed at.
